If you drive from LA or Vegas to Aspen, you will definitely encounter landscape beauty like this along the way. Into the sunset on Christmas Day, just inside the Utah border. No life in sight. Driving on Christmas day in the middle of nowhere is lonesome. You share the road with the occasional cowboys and their families. Hungry. The protein bars we got at our last fuel up took us this far. The ONLY restaurants open on this long stretch are Thai – Thai food for cowboys in the lonesome old west. Hmmm. We figured there’d be at least a truck stop diner open. Nope. So we sprang for a Thai restaurant near Green River. Remember the scene in Star Wars at the interplanetary joint? Next stop: Vegas…
